HORS D'OEUVRES TO BE PASSED:

BEEF CARPACCIO ON EDIBLE SPOON
Thinly sliced beef tenderloin with red pepper aioli, garnished with caramelized shallots and served on an edible spoon.

COCONUT PRAWN LOLLIPOP
Prawn roll up on a stick, savoury batter and sweet coconut served with an apricot ginger dipping sauce.

DUCK CAKES
Duck blended with Spices and fresh Thyme, lightly grilled and served warm with a Wild Blueberry Chutney.


SOUP:

ROAST WINTER SQUASH AND GREEN APPLE
Seasoned with shallots, turmeric and a hint of cayenne.


SALAD:

HONEY ROASTED PECAN AND PEAR SALAD
Honey roasted pecans and caramelized annapolis pears served on an arugula nest. Served with a honey champagne vinaigrette.


MAIN COURSE:

FILET OF BEEF WITH PEAR & FIG GLAZE
Filet of beef with a pear and fig glaze, roasted medium rare and served with a balsamic demi glace.

THREE POTATO MASH
Yukon Potatoes, Sweet Potatoes and Yams comprise this three Potato Mash.

SAUTEED BABY GREENS
Fresh Baby Bok Choy, Baby Spinach, Brocollini and Haricot Vert as well as Baby Carrots sauteed with fresh Garlic.

DECONSTRUCTED EGGPLANT PARMESAN
Layers of Lightly Breaded Eggplant, Grilled Heirloom Tomatoes and Bocconcini slices rests on Majors Homemade Tuscan Tomato Sauce. Topped with a Parmesan Crisp.

BREAD
Rosemary and Sea Salt Bread.


SWEET CONCLUSIONS:
